Turkey tutor

Thanksgiving will come a little early at the Village Pub this year. On November 22, in the restaurant’s kitchen, chef Dmitry Elperin will lead a hands-on class featuring a holiday menu. He’ll demonstrate brining and roasting a turkey, and students will prepare pumpkin soup with candied, spiced pumpkin seeds; maple syrup–infused sweet-potato purée; caramelized brussels sprouts with smoked Hobbs ham; and traditional stuffing. Of course, it’s not Thanksgiving without pie, so Elperin will also share his recipes for both pumpkin and bourbon-pecan. The payoff comes when students set aside their aprons and move into the dining room to enjoy the feast beside the wood-burning fireplace.
